Résumé
Les terrasses des arrière-pays de la Méditerranée interrogent. Pour certains, elles ne sont qu’un marqueur banal de l’agriculture de pente que l’on retrouve, dans nombre d’autres espaces de montagne, à l’échelle planétaire. Pour d’autres, elles constituent des patrimoines à transmettre, moteurs de transformations identitaires contemporaines. Les observations menées en Ardèche et dans les Cévennes montrent qu’elles témoignent de la fragmentation de ces arrière-pays. Sous l’effet du profond mouvement de métropolisation et de littoralisation, qui marque tout le pourtour méditerranéen, les terrasses deviennent des « mosaïques mouvantes » dont les formes et les fonctions méritent d’être explorées. Pour partie, elles constituent des périphéries périurbaines, porteuses d’habitat proches des villes, mais aussi d’espaces récréatifs et touristiques plus éloignés. Plus à l’écart des flux de toutes sortes, elles deviennent des marges, marquées par l’isolement, le vieillissement des populations qui ne tiennent que par une lutte sans relâche

Nous avons étudié le cas de 5 productions spécifiques développées dans les montagnes ardéchoises et les Cévennes. L’analyse montre qu’en parallèle à une tendance à la banalisation, l’ancrage local de ces spécificités repose sur une triple trajectoire de spécification de produits, mais aussi de territorialisation et de patrimonialisation des terrasses qui les ont portés. Dans certains cas, les terrasses deviennent des espaces de résilience, en particulier face à des changements climatiques, et contribuent à l’entrée en transition des territoires.

Abstract
The terraces of the Mediterranean hinterland are a source of concern. For some, they are
only a common marker of slope agriculture, which is found in many other mountain areas around the world. For others, they constitute heritage to be transmitted, drivers of contemporary identity transformations. Observations carried out in Ardèche and Cévennes show that they testify to the fragmentation of these hinterlands. Under the effect of the profound movement of metropolization and coastalization, which marks the entire Mediterranean region, terraces are becoming «moving mosaics» whose forms and functions deserve to be explored. In part, they constitute peri-urban peripheries, providing housing close to cities, but also recreational and tourist areas further away. No longer isolated from flows of all kinds, they become margins, marked by isolation and the ageing of populations, which are only held together by a relentless struggle to maintain a minimum level of public services. Yet, here and there, these margins become productive and innovative. This is the situation that caught our attention. Résumé
Le lavandin, une culture introduite dans la région d’Oulmès par des étrangers, a mis longtemps avant d’être adoptée par les exploitants locaux et connaitre une extension sur plus d’un millier d’hectares. Récemment, son classement par les pouvoirs publics comme produit de terroir et l’identification des huiles qui en sont issues par un label AOP « Huile essentielle du lavandin d’Oulmès », explique l’intérêt que lui portent de nouveaux acteurs, pépiniéristes, collecteurs, artisans et industriels de la distillerie, issus de différentes régions du Maroc, ainsi que des opérateurs des plantes à parfums étrangers. Les uns et les autres se positionnent à différents niveaux de la filière, et cherchent chacun à tirer un avantage des produits d’une culture classée prioritaire dans le développement agricole de la région, et sur laquelle il y a une demande pressante des consommateurs. Cet article questionne le bien fondé d’un projet topdown qui tente d’ériger une culture révélée de l’extérieur au rang d’un produit spécifique,
créant ainsi une image simplifiée d’un territoire à la réalité complexe et doté d’autres éléments identitaires avec plus d’épaisseur historique.

Abstract
The lavandin is a crop introduced into the region of Oulmès by foreigners; it took a long time before it was adopted by local farmers and extended to more than a thousand hectares. Recently, its classification by the public authorities as a local product and the identification of the oils resulting from it by a PDO label «Huile essentielle du lavandin d’Oulmès», explains the interest of new actors, nurserymen, collectors, craftsmen and industrialists of the distillery, from different regions of Morocco, as well as foreign aromatic plant operators. Both are positioned at different levels of the supply chain, each seeking to take advantage of the products of a crop that is a priority for agricultural development in the region. This article questions the validity of a top-down project that attempts to build a ‘traditional cultivation’ revealed from the outside as a specific product, thus creating a simplified image of a territory with high complexity, and occulting other identity elements with greater historical depth.
